Most people think of allergies as being limited to reactions to environmental or seasonal allergens (dust, mold, pollen, etc). When we think of food allergies, what often comes to mind is a severe peanut allergy that sends someone in to anaphylaxis shock.
While those allergies do exist and can cause life-threatening symptoms (body’s IgA response), there is another type of reaction to some commonly eaten foods that cause more subtle, chronic and potentially very troubling symptoms. These are known as food sensitivities, or a body’s IgG response.
An IgA response (eg. eating a peanut and your face swells up and you can’t breathe), is an “immediate response” (food allergy). It provokes an immediate reaction from the immune system when the food is ingested. An IgG response, or “delayed response” (food sensitivity) can cause a milder reaction that can occur anywhere from a couple hours to 72 hours after the food is ingested. Therefore, it is very difficult to determine which food or foods caused the reaction or symptom.
This is where testing comes in handy. A simple blood draw tests 87 commonly eaten foods, showing which foods your immune system is reacting to at an abnormal level.
